Batida Pina Colada Jam

OUR LET’S-HAVE-A-LAZY-SUNDAY-TOGETHER-JAM

FANCY, JUICY, LOW IN ALCOHOL

What you need

  • 120 ML MANGAROCA BATIDA DE CÔCO
  • 50 ML RUM
  • 1 LARGE PINEAPPLE
  • 40 G GRATED COCONUT
  • 100 ML FRESH ORANGE JUICE
  • 150 G WHITE SUGAR
  • 1 PCK. GELFIX (3:1), FOR 1000 G FRUIT

And off you go!

PEEL AND FINELY DICE THE PINEAPPLE, MIX IN A PAN WITH THE ORANGE JUICE AND GRATED COCONUT. IF YOU WOULD LIKE TO HAVE A SMOOTHER TEXTURE, THEN MIX WITH A HANDBLENDER. NOW STIR 2 TABLESPOONS OF WHITE SUGAR AND THE FRUIT INTO THE MIXTURE. BOIL THE JAM AT MEDIUM HEAT WHILE CONSTANTLY STIRRING. FOLD IN THE REMAINING SUGAR (BOTH TYPES OF SUGAR) AND BOIL THE JAM AT THE HEAT AGAIN. AFTER 2 MINUTES, SLOWLY ADD THE RUM (ATTENTION: JAM MAY SPIT). ADD THE MANGAROCA BATIDA DE CÔCO AND AFTER APPROX. 3 MINS, TEST WHETHER IT HAS ALREADY SET. FINALLY, FILL THE JAM IN A COOL SCREW-TOP JAR, SEAL IT,  AND TURN IT UPSIDE DOWN FOR 5 MINUTES. HELLO ...
